For the updated version of book, are their plans to include SwiftUI projects?

I think your suggestion is very valid, and most likely will be the case. SwiftUI is slowly gaining steam, and it is clear that Apple is pushing this new technology. It is also quite clear that Core Data is here to stay, and can integrate with SwiftUI, so it only makes sense that future editions of the book will cover this topic.
