I hope in the update for this book, MVVM could be covered without using RxSwift and be implemented with something more native

This is actually a very fair request, and I do hope the authors provide at least an additional example in native iOS code.
Interestingly enough, MVVM appears to be the preferred architecture when using SwiftUI, so that actually might be a good solution to your wish
