What about custom complex UIs?
Is it even possible to create entirely custom cells / views with different options and animations (like animatable, expandable views, custom pickers, gradients, etc.) using Flutter?

You can absolutely create complex UIs using Flutter. We hope to do more Flutter tutorials in the near future, and will add some more complicated UIs to the sample apps. In the meantime, check out these links from the sample docs:
